For non-veg admirers, Spicy Masala Chicken Drumstick is a delightful recipe to experience a

delicious chicken with minimal effort.
The preparation of spicy masala chicken drumsticks is very easy and simple to follow. With the addition of different spices, you can enhance the taste of this aromatic chicken recipe. Now, aside from the taste, the versatility of masala chicken drumsticks is what I love the most. You can either eat the juicy drumsticks on their own or pair them with any kind of bread or rice.

Ingredients to Prepare the Marinade
Every time I cook chicken, marination is the most essential process that I never forget. It surely is non-negotiable. If you want to have a flavorful bite of chicken then make sure you marinate the chicken beforehand. Moreover, it will also give a tender texture to the chicken.
I follow a straightforward recipe for the marinade that I’m sharing here: A mixture of acid, spices, and yogurt.
Here’s how you can prepare this marinade without any hassle:
- Add Lemon Juice: Adding lemon juice to the marinade will tenderize the chicken. It will make the chicken more juicy and flavorful. All you have to do is add lemon juice and salt and let it soak for 10 minutes.
- Add Curd or Greek Yogurt: This practice is common in almost all Indian households where chicken is cooked. You can tenderize the chicken by adding the curd or yogurt. It prevents the chicken pieces from becoming tough while cooking.
- Add Some Spices: Another thing you need to make sure is to add aromatic spices to your marinade. Some common examples of spices that you should consider include red chili powder, turmeric, garam masala, ground coriander, ground cumin, salt, paprika, red chili powder, ground cumin, garam masala, salt, and paprika. Adding high-quality and fresh spices is always a great idea.
Ingredients to Prepare the Chicken

Now that we have prepared the marinade, let’s take a look at the ingredients you will need to
get the chicken ready:
- 5 Chicken Drumsticks
- 1 tbsp Salt
- 1 tbsp Oil
- 1 tbsp Kashmiri Red Chili Powder (For extra spiciness, use 2 tbsp)
- Juice of 1 / 2 Lemon
- 3 tbsp Greek Yogurt or Curd
- 1 tsp Paprika
- 2 tsp Ground Coriander
- 1 tsp Ground Cumin
- 1 Heaped tbsp Garam Masala
- 3 Cloves of Garlic (Finely Minced)
Ingredients for the Yellow Rice (Optional, but Recommended)
Having these spicy masala chicken drumsticks with yellow rice is a great dinner idea. While it’s surely not a necessary addition to the dish, you can always give this a try. Here are some ingredients that you will need to cook yellow rice:
- 1 Cup Long-Grain Aromatic Basmati Rice
- 1 tbsp Butter
- 1/2 tsp Turmeric
- 1 tsp Garam Masala
- 2 Cups Water
Instructions to Prepare Chicken Drumsticks:

You can follow these steps to make chicken drumsticks:
- First of all, wash and remove the skin from the chicken drumsticks.
- Consider using a knife to cut slits on the chicken. It makes the marinade penetrate the chicken and add flavor to the whole piece.
- Now you have to pour juice of 1 or 2 lemons, and add salt as per your taste. Then, mix it well.
- After that, let the chicken drumsticks sit for at least 5 minutes.
- To prepare the marinade, you will have to mix yogurt, coriander, garam masala, cumin, Kashmiri red chili powder, paprika, minced garlic, and oil in a bowl.
- Now add drumsticks to the prepared marinade and perfectly massage all the chicken pieces.
- Make sure the drumsticks are marinated for at least 1 hour.
- Preheat the oven or air fryer to 200°C or 400°F.
- Let the chicken drumsticks bake for at least 18-20 minutes. You can also check if the chicken has reached an internal temperature of 75°C or 165°F.
Instructions to Prepare Yellow Rice:
Here are the steps to cook yellow rice:
- Heat the pot and let the butter melt.
- Add the required turmeric and garam masala.
- Toast the mixture for just 15 seconds.
- Add basmati rice and mix it with the masala.
- After a minute, add some water.
- Cook the rice for about 25 minutes at the lowest heat setting.
